Our own jam, cooked down with tomato, cider vinegar, molasses and smoke into a barbecue sauce that tastes like nowhere else.

Dragon Fruit Jam BBQ Sauce

A tropical, smoky barbecue sauce built around our own Red Fleshed Dragon Fruit Jam rather than around corn syrup.

The jam does the work that sugar usually does, so the sweetness arrives as fruit instead of as syrup. Tomato paste and cider vinegar give it backbone, molasses and smoked paprika give it depth, and a little chipotle keeps the finish warm rather than hot.

    Dragon fruit jam (red fleshed dragon fruit, cane sugar, lemon juice, citrus pectin), tomato paste, apple cider vinegar, water, molasses, Dijon mustard, smoked paprika, garlic powder, onion powder, salt, black pepper, chipotle pepper.

    Made with locally grown dragon fruit from Maui, by way of our own jam.

    Wailuku, Maui, Hawaiʻi. In small batches, by hand

Put It On

Sweet enough for the grill, sharp enough for a sandwich. It caramelises fast, so it belongs on at the end of a cook rather than the beginning.

Where It Starts

It Begins as Jam

Most barbecue sauces get their sweetness from sugar or corn syrup. This one gets it from a jar of our own preserve.

That is why the fruit is still recognisable in the finished sauce. Dragon fruit is delicate, so it would disappear behind a heavy smoke or a hot chile. Held in the jam and balanced against vinegar and tomato, it stays.

What’s in the Bottle

Thirteen ingredients, four of which are the jam. Nothing added for color: the depth is molasses and smoked paprika, and the fruit is real.

Made in a home kitchen not routinely inspected by the Department of Health.
