Candied Dragon Fruit Peel
Net wt 57 gDragon fruit peel, cane sugar and fresh lemon juice. Nothing else goes in, and nothing goes to waste.
The peel is trimmed, simmered slowly in syrup until it turns translucent, then dried until it is chewy rather than sticky. The result is gently sweet with a faintly floral, almost citrus edge, and it holds the fruit’s color beautifully.

Ways to Enjoy It
Good on its own straight from the bag, and better still when it has a job to do.
Baking
Chop it into scones, banana bread, shortbread or a fruit cake in place of candied citrus.
Cheese Boards
Sharp cheeses and salty cured meats both take well to it. Put it where you would put quince paste.
Yogurt & Granola
Chopped over yogurt or stirred through granola for chew and color.
Savory Relish
Chopped fine with lime, cider vinegar, Dijon and red onion, it turns into a relish for pork. See the recipe.
On the Glass
A strip on the rim of a cocktail or a glass of sparkling water, in place of a twist.
