Each one is made by hand in Wailuku, in batches small enough to watch closely, from fruit grown on the island. The barbecue sauce is made from the jam.

Grilled Baby Back Pork Ribs

Low and slow over indirect heat, wrapped to tenderise, then glazed with our Dragon Fruit Jam BBQ Sauce only in the last twenty minutes so the sugars cannot scorch.

Hot Sauce Glazed Mahi Mahi

A honey, lime and butter glaze built on our hot sauce, with a pineapple salsa cut through with jalapeño and cilantro. Works just as well on seared ahi.
